Kibbeling
One of the first Dutch food items I sampled when I first moved to The Netherlands was kibbeling. It’s fresh cod cut into bite-size pieces, dipped into batter, and deep fried. Yes, it’s fish nuggets the Dutch way!
I so enjoy going to the open market on Saturdays with my husband, buying the fresh produce so invitingly displayed on the various stalls, and ending this trip with a nice, hot and crisp serving of kibbeling sold by the local fish monger.
As my husband and I did our groceries and market buying today, a Friday, I knew we would not be having kibbeling tomorrow. (That is, without having to specially go out just for that.) Obviously, the thought of not having them… made me want them even more! LOL.
So I went downstairs this afternoon to experiment and surprise hubby with kibbeling for our afternoon snack.
Ingredients:
100 grams tilapia fillet (it should be cod but any firm-fleshed white fish will do)
2 tbsp flour
1 tbsp corn flour
1 tsp baking powder
2-5 tbsp milk
1 small egg
1 tsp dried parsley
salt and pepper to taste
Procedure:
- Cut the fish into bite-size pieces. Use kitchen paper to get rid of any liquids.
- Combine all the dry ingredients together.
- Add the egg and mix well.
- Add the milk one tablespoon at a time. It’s important that the batter is not too wet; you want a nice coating on the fish.
- Season with salt and pepper.
- Let the batter stand for just about 5 minutes.
- In the meantime, heat up your deep fryer (friteuse)to 180 C. (If you don’t have a deep fryer, a deep pan will do just ensure you put in enough oil so that the fish is submerged in oil during frying.)
- Put the fish into the batter and make sure they are well coated.
- Fry the fish for about 5 minutes.
Now you may think that ‘fish nuggets’ is easy but don’t forget I’m serving this to a Dutch man! Actually, hubby loved it. He went down from work looking for me and followed his nose to our ‘dirty kitchen’ and I could have sworn his eyes glowed when when I told him I was making kibbeling ;)
I served it with my own recipe for knoflook saus (garlic sauce) and that was a hit too. Will post the recipe for that next time.

Thank you so very much for sharing this recipe. I must try it out. My husband is Dutch and I lived in Holland for 6 years. I’m not really a fish eater but while I was in Holland I just couldn’t get enough of the kibbeling. Now we are in the US. If you don’t mind also sharing your knoflook saus that would be great. Oh I’m excited can’t wait to try it.
